Black Bean Quesadillas
Ingredients
- Flour tortillas
- Canned black beans (drained and rinsed)
- Shredded cheese
- Salsa
- Avocado (optional)
- Sour cream (optional)
Instructions
- Prepare the Filling: In a bowl, mash the black beans slightly with a fork. This helps them stay in the quesadilla better. Mix in a few spoonfuls of salsa for extra flavor.
- Assemble the Quesadillas:
- Lay a tortilla flat on a clean surface.
- Spread a portion of the black bean mixture evenly over half of the tortilla.
- Sprinkle a generous amount of shredded cheese over the beans.
- If using avocado, slice it thinly and add it on top of the cheese.
- Cook the Quesadillas:
- Heat a non-stick skillet over medium heat.
- Fold the tortilla in half over the filling and place it in the skillet.
- Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
