Black Bean Quesadillas

Ingredients

  • Flour tortillas
  • Canned black beans (drained and rinsed)
  • Shredded cheese
  • Salsa
  • Avocado (optional)
  • Sour cream (optional)

Instructions

  1. Prepare the Filling: In a bowl, mash the black beans slightly with a fork. This helps them stay in the quesadilla better. Mix in a few spoonfuls of salsa for extra flavor.
  2. Assemble the Quesadillas:
    1. Lay a tortilla flat on a clean surface.
    2. Spread a portion of the black bean mixture evenly over half of the tortilla.
    3. Sprinkle a generous amount of shredded cheese over the beans.
    4. If using avocado, slice it thinly and add it on top of the cheese.
  3. Cook the Quesadillas:
    1. Heat a non-stick skillet over medium heat.
    2. Fold the tortilla in half over the filling and place it in the skillet.
    3. Cook for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  4. Serve:
    1. Remove the quesadilla from the skillet and let it cool for a minute before cutting it into wedges.
    2. Serve with extra salsa and a dollop of sour cream on the side.
