Stir-Fried Tofu and Bok Choy

Stir-Fried Tofu and Bok Choy
Ingredients
- 1 pound extra-firm tofu
- 1 tablespoon olive oil
- 1 bunch bok choy, leaves sliced crosswise and rinsed
- 4 tablespoons stir-fry sauce
- ¼ cup coarsely chopped peanuts
Instructions
- Cut the tofu into ½-inch thick slices. Blot well between several layers of paper towels and cut into a ½-inch dice.
- Set your air fryer to 375°F and bake the tofu for 15 minutes.
- Heat oil in a wok. Add tofu and stir fry for 5 minutes.
- Add the bok choy, stir-fry sauce, and about 2 tablespoons of water. Quickly stir together, then stir-fry for another 3 to 4 minutes, just until the bok choy is wilted. Stir in the peanuts and serve.
