Red Beans and Rice

Ingredients

  • 1 pound dried red kidney beans, soaked overnight
  • 4 cups vegetable broth
  • 1 can (15 ounces) diced tomatoes, undrained
  • 3 cups cooked rice (white or brown)

Instructions

  1. Prep the Beans: After soaking the red beans overnight, drain and rinse them.
  2. Assemble the Ingredients: In your crock pot, add the soaked beans.
  3. Add Liquids: Pour in the vegetable broth and diced tomatoes (with their juice). Stir to combine.
  4. Cook: Set your crock pot to low and cook for 6-8 hours, or until the beans are tender. If you're in a hurry, you can set it to high and cook for 3-4 hours.
  5. Finish and Serve: Once the beans are tender, serve them over a bed of cooked rice.
