Red Beans and Rice
Ingredients
- 1 pound dried red kidney beans, soaked overnight
- 4 cups vegetable broth
- 1 can (15 ounces) diced tomatoes, undrained
- 3 cups cooked rice (white or brown)
Instructions
- Prep the Beans: After soaking the red beans overnight, drain and rinse them.
- Assemble the Ingredients: In your crock pot, add the soaked beans.
- Add Liquids: Pour in the vegetable broth and diced tomatoes (with their juice). Stir to combine.
- Cook: Set your crock pot to low and cook for 6-8 hours, or until the beans are tender. If you're in a hurry, you can set it to high and cook for 3-4 hours.
- Finish and Serve: Once the beans are tender, serve them over a bed of cooked rice.
